Cinnamon-Apple Cheddar Egg Rolls

I’m not going to say Apple-Pie but…. this is darn close!

 

Spencer and I absolutely LOVE making egg rolls. We’ve been creating different flavors for awhile now and we never seem to satisfy our egg roll making desire… we always end up coming up with even more ideas to try out! That’s okay though, because now we get to share fantastic recipes like this one with you!

 

You know that feeling when it’s mid-September and the grass has almost dried out, the leaves on the trees are just starting to turn, and for the first time all season you can smell the crisp Autumn breeze making her way back into your life? These egg rolls are perfect for that day. The caramelization of the sugars and spices paired with the slight creaminess from the shredded cheddar make this the yummiest bite of Autumn you’ve had…. just short of your Grandma’s apple pie! We might not be able to compete with her recipe, but you bet your bottom dollar we’re going to try!

 

What you will need:

  • Granny Smith Apples
  • Granulated Sugar
  • Light Brown Sugar
  • Nutmeg
  • Clove
  • Cinnamon
  • Water
  • Cornstarch
  • Egg Roll Wrappers
  • Finely Shredded Cheddar
  • Canola Oil
  • Candy Thermometer (for oil temperature)

Cinnamon-Apple Cheddar Egg Rolls

The most delicious deep-fried bite of Autumn you can imagine!

Ingredients
  

  • 12 oz Finely Diced Granny Smith Apples
  • 1/4 cup Granulated Sugar
  • 1/4 cup Light Brown Sugar
  • 1 tsp Nutmeg
  • 1/4 tsp Cloves
  • 1 Tbsp Cinnamon
  • 1/4 cup Water
  • 1 Tbs Cornstarch/Water slurry
  • Splash of Lemon juice
  • Finely Shredded Cheddar
  • Canola Oil
  • Butter
  • 6 Egg Roll Wrappers

Instructions
 

  • Core, peel and finely dice your apples. Add a splash of lemon juice if your apples are browning. Then, toss your apples in the cinnamon, cloves, and nutmeg.
  • In a large skillet over medium heat, add your apples, brown and granulated sugars, and water and let simmer until mixture starts to slightly thicken. Create a cornstarch slurry by adding 1 teaspoon of water to 1 teaspoon of of cornstarch, mix thoroughly, then add into the apples and combine. At this point, your mixture will start to thicken.
  • Remove from heat once the filling thickens to your desired texture (We let ours go until just short of an apple pie filling- slightly runny but thick enough that it sticks to your spoon.)
  • Let apple filling rest and come down to room temperature. In the meantime, prepare your egg roll wrappers and follow our tutorial (below) on how to wrap and fry egg rolls.
  • Once your egg rolls are done frying, transfer to a paper towel and let cool down slightly before lightly brushing with butter and rolling in cinnamon-sugar to coat the egg roll.
  • Serve with a dipping sauce (we think Caramel is great!) or enjoy all by themselves!
