Muffin Mix Pancakes- Internet Hack #1


Sometimes, simple is better. Or at least, much better than you think it will turn out!


Spencer and I have both been seeing this “internet hack” around social media lately, and since we’re suckers for breakfast, we decided we wanted to try it….

Muffin Mix Pancakes


It is exactly like it sounds…. tastes like the muffin mix of your choosing but has the texture of a light and fluffy pancake… seriously good! This would be PERFECT to try out if you have family in town or you’re hosting a kids birthday party or you’re just entertaining a large crowd for breakfast…. Anytime you want to try it, just be prepared to feel like you’re lazy. I mean, you kind of are, but WHO CARES when breakfast can be this yummy AND effortless?!?!


What you will need:

  • 7 oz Packet Muffin Mix of your choice (We used a mixed berry flavor!)
  • Milk
  • Egg
  • Cooking Spray or Unsalted Butter


Muffin Mix Pancakes

Easy-peasy pancakes made with three simple ingredients: Muffin Mix, Eggs, and Milk! Tastes delicious and eats just like a fluffy pancake.

Cook Time 10 mins
Total Time 15 mins
Course Breakfast
Servings 12 Small Pancakes


  • 7 oz Packet Muffin Mix
  • 2/3 cup Whole Milk
  • 1 Large Egg
  • Cooking Spray or Unsalted Butter


  • In a medium bowl, whisk together all three ingredients until little to no lumps appear.
  • On a griddle pan, or large skillet, heat your cooking oil or unsalted butter, and pour your batter into the pan. Cook your pancakes the way you like (I prefer gooey pancakes, Spencer likes his well-done).
  • Serve with Maple Syrup (Don't forget the peanut butter- duh!) and enjoy!
