Quick (not-quick) Bread


Homemade bread is not hard.

A bit technical? Yes. But hard? Absolutely not!


And this is the recipe you’ve been searching for. 

This bread is nothing short of amazing. It’s dense, yet light. It’s smooth yet has the perfect chew- not chewy, but just a darn good bite of some good ol’ bread! It is the quintessential homemade bread recipe that could make way for the most delicious grilled cheese, or decadent french toast, or perfectly toasted garlic bread (pair it with a nice plate of spaghetti)… I am drooling just typing this out! And the best part about this recipe is that you likely have almost ALL the ingredients you need right in your kitchen! The only a-typical ingredient is yeast, and WHAT IS BREAD WITHOUT YEAST? Just an unleavened sad pile of un-risen, goopy dough, that’s what. 


PLEASE do yourself a favor and run to the grocery store, grab yourself some instant yeast, run back home and BAKE! THIS! BREAD!



What you will need:

  • All Purpose Flour
  • Granulated Sugar
  • Kosher Salt
  • Baking Soda
  • Instant Yeast
  • Whole Milk
  • Water
  • Butter
  • Cornmeal
  • An empty stomach so you can eat two pieces immediately after baking!


Quick (not-quick) Bread

The only homemade bread recipe you need.... for now!

Course Bread


  • 3 cups All Purpose Flour
  • 1 Tbsp Sugar
  • 1 1/2 tsp Kosher Salt Substitute Iodized if needed
  • 1/4 tsp Baking Soda
  • 1 Tbsp Instant Yeast
  • 1 cup Whole Milk
  • 1/4 cup Water
  • 2 Tbsp Unsalted Butter
  • Cornmeal for sprinkling in pan


  • In the bowl of your stand-mixer (or large bowl), whisk together your flour, sugar, salt, baking soda, and instant yeast.
  • Combine your milk, water, and butter in a microwave safe bowl. Heat your liquid up to 120-130 degrees Fahrenheit. A digital kitchen thermometer comes in handy here. Try heating 10 seconds at a time and check your liquid's temperature between sessions, making sure to stir together to make sure of even heating. It took ours approximately 40 seconds, but that will vary from one microwave to the next.
  • Pour your liquid into your dry mixture and mix until thoroughly combined.
  • With your stand-mixer (or hand mixer) beat your mixture on high speed for 1 minute. You can even use your hands here- beat until dough starts to become smooth and elastic.
  • Grease an 8"x 4" bread pan with butter and lightly sprinkle in your cornmeal. Pour in your dough and level it out as much as possible. Cover it with a damp towel and keep at room temperature and let rise for one hour.
  • Preheat your oven to 400 degrees Fahrenheit, then remove the towel from your pan and bake your bread for 22 minutes, or until GBD (Golden-Brown-Delicious!)
  • Let the bread rest for 5 minutes in the pan, then remove and transfer to a cooling rack. Serve immediately with some butter or turn into a tasty treat... the options are endless!
