Strawberry Blondies


These. Blondies. Are. Pure. Bliss.

Spencer brought home some freeze-dried strawberries a couple weeks back because a co-worker of his had bought them on a whim and decided she didn’t like them. She gave them to Spencer thinking he’d find something to do with them….

And bake something he did!

He had been going on and on about wanting to make some blondies and asked if I thought the freeze dried strawberries would work well with the batter… obviously there’s no harm in trying so we whipped something up and BOY! did they turn out absolutely delicious! Sometimes, ideas just come to you and you just HAVE to act on them. Who knows? Maybe you’ll pleasantly surprise yourself just like these blondies did for us!

These bars are decadently chewy like a brownie, and incredibly soft and moist like a freshly baked chocolate-chip cookie (minus the chocolate chips) and are an absolute TREAT to eat! Perfect for a midnight snack, easy dessert, or even grab-and-go breakfast! (Yes, I am currently 26 weeks pregnant and I am NOT ashamed to say that since these have been in our house, there have been a couple mornings where I’ve walked out the door only to scarf a whole blondie down on the drive to work)…. the point is, you have GOT to try these for yourself!

What you will need:

  • Unsalted Butter
  • All Purpose Flour
  • Brown Sugar
  • Granulated Sugar
  • Baking Soda
  • Kosher Salt
  • Eggs
  • Vanilla Extract
  • Strawberry Extract/Flavoring (My favorite is the Strawberry Candy Oil from LorAnn oils!)
  • Freeze Dried Strawberries
  • White Chocolate Chips


Strawberry Blondies

Deliciously and decadently chewy blondies with a strawberry twist, perfect for a Summer treat!
Course Dessert


  • 1 1/4 Cups Melted Unsalted Butter (2 1/2 sticks)
  • 2 1/4 Cups All Purpose Flour
  • 2 Cups Light Brown Sugar
  • 1/2 Cup Granulated Sugar
  • 3 Large Eggs
  • 1 1/2 tsp Baking Powder
  • 1 1/2 tsp Kosher Salt
  • 1 1/2 tsp Vanilla Extract
  • 1 tsp Strawberry Flavoring (I use Strawberry Candy Oil by LorAnn Oils, so you may want to add 1/2 - 1 tsp extra if you are using strawberry flavoring as it won't be quite as strong as the oil)
  • 1 Cup Freeze-Dried Strawberries Roughly chopped
  • 1 Cup White Chocolate Chips


  • Preheat your oven to 350 degrees Fahrenheit. Grease a 9 x 13 pan (if using anything other than a glass pan, you'll want to line the bottom with parchment paper and grease that as well).
  • In a large saucepan over medium-low heat, melt your unsalted butter, without letting it reach a boil. Remove from heat and stir in both sugars until well-mixed. At this point you'll want to transfer the mixture to a large mixing bowl or to the bowl of your electric stand mixer.
  • Add your eggs, vanilla, and strawberry flavoring and using the paddle attachment on medium speed on your stand mixer (a hand mixer works just fine here too!) mix to combine. Add in your flour, baking soda and salt and mix on medium speed until a thick batter is formed. Think halfway between cookie dough and cake batter!
  • On low speed, add in your white chocolate chips and freeze-dried strawberries until just combined, then pour the mixture into your prepared pan.
  • Bake at 350 degrees Fahrenheit for 32 minutes (longer if you prefer a "harder" less-chewy blondie), let cool, then serve and enjoy!
