In a large bowl, add your salt, paprika, sugar, black pepper, turmeric, cinnamon, cayenne pepper, and garlic powder and give it a good whisk to make sure it is all incorporated. Add in your chicken wings and toss to coat. Set aside.
Set your air fryer to 400 degrees Fahrenheit and add as many wings as you can fit in a single layer- do not stack them in your air fryer or you'll miss out on that beautiful crispy texture! Cook for 12 minutes total, flipping the wings halfway (six minutes) through. If you don't have an air fryer- check the notes below!
In a medium saucepan over medium heat, combine the chili powder, ginger, coriander, lime juice, soy sauce, honey, oyster sauce, sweet chili sauce, crushed red pepper and 1/2 cup of water. Heat until warmed through.
In a small bowl, combine a 1/4 cup of water and your cornstarch to create a slurry, then whisk into your saucepan. Stir the sauce constantly until thickened.
Once the sauce has thickened, coat your cooked chicken wings in the sauce and serve.
